Trumpet royales.
Also known as the king trumpet mushroom, also known as the French horn. They're native to the Mediterranean regions of Europe. It has little flavor and aroma when raw. The texture is similar to the abalone. I like to use them with a nice steak, or scallops, or lobster.

Lunch...shrimp and grits
Everyday, in the kitchen, one of us gets voted to make lunch for the rest of the chefs in the kitchen. ( we're only open for dinner service). Sometimes we throw down some awesome lunches. It's important that we eat well. It's important for us to take pride in what we make for each other, because that ethic applies to not only what we serve to our guests, but what we serve to ANYONE. Including our peers.
Root beer "molasses " recipe.
This molasses is super versatile. It works as an accompaniment for a lot of things. It goes great with roasted duck, root vegetables, foie gras, and blah blah. It's not super sweet, it will also work with "earthy" components in a dish.
2 - 12oz cans of root beer( I use doc browns, or jones soda)
1 star anise- toasted
1 cinnamon stick- toasted
1/2 c raw sugar
1. Combine all ingredients, and reduce to a syrup...

Sorry dudes, it's been a while.
I haven't been posting lately. Any excuse is a bad excuse, so we'll call it neglect. It won't happen again. I've had a lot of projects going on, and one of them, being a new venue! I'm happy to say that I am part of a re-branding of my sister restaurant " deli unique". We're in the process of turning the deli, located next door to the Novi Chophouse , into a chef driven breakfast and lunch spot. An "upscale diner". The menu is now complete, and I am very excited to train the team on how to properly execute the very prep heavy house made , from scratch menu. I'll keep you updated on the progress, we're set to open April 1st, under a brand new name! The Chophouse is excited to have a little sister restaurant , with the menu created by myself, and with the help of my team!
